Lau Tha Seahorse – The Signature Flavor of Mui Ne
Originating from the Seahorse Resort & Spa kitchen, Lau Tha Seahorse (a type of Vietnamese hotpot) is not only the culinary emblem of the resort but is also considered the "soul" of Mui Ne cuisine – a place where the flavors of the sea blend with the essence of Vietnamese culture.
Prepared with the freshest ingredients from Mui Ne’s sea, Lau Tha Seahorse embodies a rustic yet refined character. The dish consists of fresh sliced anchovy (or small fish) meticulously prepared by resort chefs, combined with pork belly, fried egg, green vegetables, mango, cucumber, and a subtly sweet broth cooked from shrimp, meat, and tomatoes. All are artistically presented on a bamboo tray lined with green banana leaves, creating a vibrant culinary tableau that fully reflects the natural beauty of the coastal region.
More than just a dish, Lau Tha also expresses the Vietnamese culinary philosophy based on the Five Elements – the harmony of metal, wood, water, fire, and earth, corresponding to the five tastes: spicy, sour, bitter, salty, and sweet.
The colors, flavors, and delicate presentation have made this dish a cultural symbol of Mui Ne cuisine – once beloved and personally prepared by the famous chef Yan Can Cook during his visit.
